Easiest Baked Rice Pudding


1 cup cooked rice
4 eggs
1 (13 oz) can evaporated milk
1/2 cup sugar
1 tsp. vanilla
1 cup milk
dash of nutmeg
1/2 tsp. cinnamon
1/4 tsp. salt
1/4 cup raisins (optional)

Mix all ingredients together and pour into a well greased 9 X 9 inch pan.
Bake at 350 degrees for 45 minutes.
Remove from oven and cool at least 20 minutes before serving warm.
...or cool completely, and serve at room temperature.
...or refrigerate cooled pudding for a few hours, to serve cold.
