Ham Balls

Ham Balls: 
1 1/2 lb. ground ham 
1 1/2 lb. ground pork 
1 C. milk 
1 C. fine bread crumbs 
2 eggs, beaten 
1/2 tsp. salt 
1/4 tsp. pepper 

 Sauce: 
1 C. brown sugar 
1/2 C. water 
1/4 C. apple cider vinegar 
1 Tbsp. cornstarch 
1 tsp. dry mustard 

 Combine all ingredients for ham balls and mix well. Shape into balls (the size of a tennis ball) and arrange in baking pan (this makes about 25-30 balls). 

In a saucepan combine the sauce ingredients and bring to a boil. Lower heat and simmer for 3-5 minutes until well blended. 
Pour sauce over ham balls. Cover with foil. 
Bake at 325 degrees for 1/2 hour. 
Remove and baste the ham balls with sauce and bake for another 1/2 hour.

Wrapped in "Foil Sandwiches"

12 Homemade Buns

Filling
1/2 pound chipped or shaved ham
3 hard boiled eggs(chopped)
1/3 cup shredded cheddar cheese
1/3 cup mayonnaise
1/3 cup ketchup
1/8 tsp. onion powder
1/8 tsp. salt

Preheat oven to 350°.
Cut 12 sheets of aluminum foil (enough to cover a completed sandwich).
Mix remaining Filling ingredients together in a large mixing bowl well.
Split buns in half with a serrated knife.
Spoon Filling Mixture evenly among the 12 Buns.
Wrap each sandwich in foil.
Place on cookie sheet and bake in preheated oven for 20 minutes.

This is a great item to have at a luncheon, picnic or "just because".

Ham Roll-Ups

1 pound sliced deli boiled ham
1 pound sliced Swiss cheese
1 (10 oz.) package frozen chopped broccoli, thawed
1 can cream of mushroom soup
1/2 soup can of milk or 1/2 soup can of white wine.
Optional, one small can of mushrooms, drained.

On your counter, lay out the boiled ham and place one slice of the Swiss cheese on top.
(This will make as many rolls as you have slices of cheese, approximately 15-18 rolls,
depending on how thick you like the slices).
On top of the cheese, close to one end, place a heaping tablespoon of broccoli.
Roll each one up and place in a 13x9 inch casserole.
Mix the soup with the milk or wine and the optional drained can of mushrooms.
Pour the mixture over the roll-ups.
Bake in a 350° for 30 minutes.

I remember having this @ Uncle Yunno's (I believe) 75th birthday. I couldn't wait to get the recipe. These are so, so easy and makes a perfect appetizer to a holiday meal or even makes an easy lunch, served with a slice of bread. The name associated with this recipe is Norma Ballas. I am so glad she shared this with me. They are so yummy.
If you like, you can sprinkle grated Swiss or Colby cheese on the top before baking.

Ham Topping for Baked Potatoes

1 chicken bouillon cube
½ cup boiling water
1 ½ cup milk
¼ cup butter
¼ cup flour
½ cup shredded cheese (Your choice, I use Cheddar or American)
1 tsp. Worcestershire sauce
2 cups cubed, cooked ham
1/3 cup sliced olives
2 Tbsp. diced pimiento
1 Tbsp. dried parsley

Dissolve bouillon cube in boiling water. Stir in milk and set aside. Melt butter in saucepan; add flour, stirring, over medium heat until smooth. Cook 1 minute. Gradually add bouillon mix. Cook over medium heat, stirring constantly, until thickened. Add cheese and Worcestershire. When cheese melts, add ham, olives, pimiento and parsley. Heat thoroughly. Serve over baked potatoes.
