Salted Sesame Buns
1 (.25 ounce) package active dry yeast
1 1/2 tsp. sugar
1 1/4 cups warm water
1 Tbsp. olive oil or vegetable oil
3 1/2 cups all purpose flour
1 tsp. salt
1 Tbsp. cornmeal
1 egg white
1 Tbsp. water
Sesame seeds (optional)
Kosher sea salt (optional)
Directions:
1. In a large mixing bowl, dissolve sugar in warm water, then stir in yeast to proof. Proof until foamy, about 5 minutes.
2. Add oil and 2 cups flour to the yeast mixture; beat well.
3. Add 1 more cup of flour and the 1 teaspoon of salt and when the dough starts to pull together, turn out onto a lightly floured surface.
4. Start incorporating as much of the last 1/2 cup of flour to form a smooth, elastic, slightly tacky dough. Knead for about 3-4 minutes and let it rest for 5 minutes covered with the large mixing bowl.
5. After the 5 minute rest, knead for another 3 minutes.
6. Lightly oil the large mixing bowl, place the dough in the bowl and turn to coat top with oil.
7. Cover with a tea towel and let rise in a warm place until doubled in size, about 40 minutes.
8. Punch dough down, and divide into 12 equal portions. Shape into round buns. Place on large, lightly greased baking sheet sprinkled with cornmeal. Cover and let rise in a warm place, free from drafts, until doubled, about 40 minutes.
9. Preheat oven to 400 degrees F.
10. Beat together egg white and 1 tablespoon water and brush the tops with some of the egg wash (and save the remaining egg wash). Sprinkle tops with sesame seeds.
11. Bake in preheated oven for 15 minutes. Remove and brush with remaining egg mixture, and now sprinkle with the sea salt on top and bake 10 to 15 minutes more, or until evenly golden brown.
12. Cool on wire racks.

Mum's Homemade Bun Recipe
This Bun Recipe is good for making Buns, Stromboli or Pepperoni Rolls.

2 Tablespoons sugar
2 Tablespoon vegetable oil
1 package dry yeast
1 teaspoon salt
3 -3 1/4 cups flour (I usually only need 3 cups)
Combine first three ingredients, mixing well. Sprinkle with the yeast and let stand for 5 minutes. Add 2 cups of the flour and the 1 teaspoon salt, mix in thoroughly. Add the 1 cup more of the flour and when incorporated, begin to knead. Knead on a floured surface adding in more of the remaining 1/4 cup of flour until the dough is smooth and elastic (about 5 minutes). ***Place the dough ball on a lightly floured surface and cover with the bowl. Let it rest for 10 minutes. After 10 minutes, KNEAD for a count of 50 turns. Repeat from *** one more time. Grease or butter the bottom of the bowl and place dough in and flip. Cover bowl with a tea towel or two. Place in a warm spot to rise for 1 1/2 hours. After 1 1/2 hours, gently punch down and form either buns, pepperoni rolls or Stromboli, cover with tea towel and let rise a second time for 1 hour.(Usually 1 hour for buns or pepperoni rolls---30-45 minutes for Stromboli).
Use this dough for 12 sandwich buns, 60 mini pepperoni rolls or 2 loaves of Stromboli. Now, let's get onto baking.
For sandwich buns: 375° for 15 minutes. For pepperoni rolls: 375° for 13 minutes. For Stromboli: 350° for 25-30 minutes. (all should be golden brown when done.)

Bev’s Winner Homemade Bread Recipe
This recipe makes 3 loaves of Bread---Yum!!!
1 1/2 cup warm water
1 package active dry yeast
1 1/2 Tbsp. sugar
In a mixing bowl, stir sugar and yeast in warm water and set aside.
Let proof for 10 minutes.
After yeast has proofed add 1 1/2 Tbsp. shortening or vegetable oil
Measure out 4 cups all-purpose flour and 1 1/2 tsp. salt, set aside.
* (have a small amount more available (about 1/4 cup), to dust bread board with for each punch down and knead.)
Add 2 cups flour to the yeast mixture and mix in well.
Add the other 2 cups flour and once stirred in and starting to form a ball, turn out onto floured bread board and knead for 5-6 minutes. Place in a greased bowl and cover with a tea towel. *In 10 minutes, turn back out onto floured board and knead for about 20 to 30 folds, cover and let rest again.* Repeat this again in 10 minute rest/knead-fold 2 more times. After the last knead-fold, let dough double in size (approximately 1 hour.)
After the hour rise divide dough into 3 pieces and form into loaves.
Place 3 loaves on a greased cookie sheet, evenly spaced width-wise. Cover with a tea towel and let rise, in a warm place, for 1 hour.
Preheat oven to 375 degrees.
When Ready to bake...Make 3-5 slashes with a sharp serrated knife across the tops of each loaf.
Bake for 10 minutes at 375 degrees, reduce heat to 350 and bake 15 minutes longer or until golden brown. Remove from oven; cool on wire rack. I don’t brush mine with butter, because we like a harder crust. If you like a softer crust , brush with butter.
