Cauliflower-Cheddar Soup

        1 head cauliflower, cut into small pieces

    32 ounces chicken broth

    1 medium onion, chopped

    14 cup butter

    14 cup flour

    14 teaspoon pepper

    1/2  teaspoon cumin

    1/2 teaspoon onion powder

    1-2 teaspoons lemon juice

    2 cups milk

    1 chicken bouillon

    2 cups shredded sharp-cheddar cheese (8 ounces)

Directions

    1. In a Dutch oven, simmer cauliflower in chicken broth until slightly softened, and set aside, leaving in broth.

    2. Sauté onions in melted butter until soft.

    3. Season with pepper, onion powder, cumin and cayenne.

    4.  Add flour, and continue to cook over medium heat for about 5 minutes, stirring constantly to make a roux.

    5. Add flour mixture to cauliflower and chicken broth.

    6. Add milk.

    7. Increase heat, and cook until thickened and starting to boil.

    8. Reduce heat, and add cheese, stirring until melted and combined.

    9. Turn off heat so as to not allow to boil after adding cheese.

    10. Finish off with the lemon juice.

Mummy's Broccoli Cheese Soup

1/4 cup butter
1 medium onion, finely chopped
1 cup carrots, thinly sliced
1/4 cup flour
1 cup half and half
1 cup milk
2 cups chicken broth
3/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. nutmeg
1/2 pound fresh or frozen, chopped broccoli
2 cups shredded sharp cheddar cheese

In a Dutch Oven, melt the butter over medium-low heat.
Add the onions and cook for 3-4 minutes, until translucent.
Add the sliced carrots and continue cooking over medium-low heat for 5 minutes.
Mix in the flour and totally incorporate it into the butter, onion and carrot mixture.
Cook for 1 minute more.
Gradually stir in the half and half and milk and then the chicken broth.
Add in the salt, pepper, and nutmeg.
When it all comes to a simmer, reduce heat a little, and continue a slow simmer for 20 minutes.
(without a lid on the pot).
Add the broccoli and cook for 10 minutes.
Finally add the shredded cheese, stirring until blended in thoroughly.
Serve immediately.

This soup is excellent on its own or serve with a crusty roll or soft pretzel.
It is great served in a Bread Bowl. (recipe to be posted soon).

Sweetheart's Super Salad

1 head cauliflower
1 bunch broccoli
1 basket red cherry tomatoes
1 pound Muenster Cheese cut into bite size cubes
2 or 3 small cans drained mushroom stems and pieces
1 can black pitted olives
1 bottle (16 oz) Zesty Italian Salad Dressing

Mix all together in your largest bowl or pot.
Let marinate in a Tupperware container, or 2, in refrigerator.
